Freshly ground black pepper corns.

Salt. A preservative and for seasoning.

Rosemary is the herb in our Herb Salt sauce.

White grape vinegar. Normal Spirit vinegar is too sharp to add the quantities we need as a natural preservative.

 

Lemon Zest and Lemon juice

 Fresh garlic. Used in a granular form, or roasted whole in the oven.

 Green Thai style chillies.

Habanero chillies. One of the hardest products to source as they disappear from the markets during winter.

Fresh celery and onion for the added savoury Umami flavours.

Various spices. Turmeric, dried onions, Paprika and Cumin are a few of the dried spices we use to enhance the flavours.
